Zolfini beans
The Zolfino bean, a small light-yellow bean has been grown on the Valdarno hills, at the foot of Pratomagno, for centuries. The distinctive trait of this bean, praised by some of the best contemporary chefs, is the thinness of its peel, which totally disappears when it is cooked.
Even though the Zolfino bean is very hard to grow and was nearly forgotten for decades, it managed to survive thanks to the passion of a few small farmers. Today the Zolfino bean has been rediscovered and it has regained a new life thanks to an association of custodian farmers constituted by the University of Firenze which, moreover, has done research to improve its cultivation.
It is worth of note that the Zolfino bean was the first presidium established by Slow Food.
