The olives are harvested by hand before they are fully ripe, they are cold pressed at a temperature below 27 degrees Celsius.The extra virgin olive oil thus obtained has a very low acidity and is stored in hermetically sealed steel containers.The oil is kept at a controlled temperature for about 2 months so that it is naturally purified and can be bottled without having to be filtered, thus preserving all its organoleptic characteristics.
